In a traditional courtyard villa on the shore of Beihai, you can get a taste of China's imperial cuisine. Established in 1925 by three royal chefs, Fangshan serves dishes once prepared for the imperial family, based on recipes gathered across China. Fangshan is best known for its filled pastries and steamed breads—traditional snack foods developed to satisfy Empress Dowager Cixi's sweet tooth. To experience Fangshan's exquisite imperial fare, order one of the banquet-style set meals at Y500 per person. Be sure to make reservations two or three days in advance.

Chic Bellagio is a bright, trendy-but-comfortable restaurant serving up typical Sichuan dishes with a Taiwanese twist. A delicious choice is their migao (glutinous rice with dried mushrooms and dried shrimp, stir-fried rice noodles, and meatball soup). You can finish your meal with a Taiwan-style crushed ice and toppings of red bean, green bean, mango, strawberry, or peanut. Bellagio is open until 4 AM, making it a favorite with Beijing's chic clubbing set. The smartly dressed all-female staff—clad in black and white—have identical short haircuts.
